French Macaroons

Macaroon (macaron, dalam bahasa Prancis) selalu disimpan di lemari es agar tetap renyah.

Bahan:

• 2 sdm air
• 125 g gula bubuk
• 45 g putih telur ayam
• 1/8 sdt cream of tartar
• 1 tetes pewarna pink berbasis minyak

Aduk rata:

• 125 g gula bubuk
• 125 g almond bubuk
• ¼ sdt garam halus

Hiasan:

• 150 g cokelat leleh
• 1 g selai raspberry
• 10 buah permen kristal rasa buah, hancurkan

Cara Membuat:

1. Alasi loyang datar (30x30 cm) dengan kertas roti. Gambar lingkaran-lingkaran berdiameter 4 cm sebagai pola. Atau, alasi loyang dengan silpat/silicone mat. Sisihkan.
2. Didihkan air  dan gula bubuk hingga bening. Angkat, sisihkan.
3. Kocok putih telur menggunakan mixer berkecepatan tinggi hingga hampir kaku. Masukkan cream of tartar, kocok kembali hingga kaku. Perlahan sekali, tuang cairan gula panas sambil terus dikocok hingga mengilat.
4. Masukkan almond dan pewarna, aduk lipat menggunakan spatula karet hingga rata.
5. Masukkan ke dalam kantong segitiga, beri spuit bulat. Semprot adonan ke loyang. Ketuk-ketuk bagian dasar loyang agar adonan sedikit merata dan udara dalam adonan macaroon sirna.
6. Memanggang: Panggang dalam oven panas bersuhu 140° C hingga matang (± 20 menit). Angkat. Celup ¼ bagian macaroon ke dalam cokelat leleh, taburi permen.
7. Setelah cokelat mengeras, olesi selai pada macaroon. Tangkup dengan macaroon lainnya. Simpan dalam  wadah kedap udara hingga saat penyajian.(f)
